Great wetland habitat is recreated when the all peat is harvested and the land re-floods, just look at the surrounding bog land.
Provided they don't take every last drop, the land is re-flooded and the moss is allowed to regrow those bogs will be cut again in a few generations. It is sustainable if not over done.
Peat is one of the best horticultural compost makers and soil conditioners for healthy vegetables, they also make compressed peat plant pots that avoids the use of plastic. It is also a fuel of course.
It can be destructively distilled, the gas used to run power plants and the carbonized remains used in active charcoal filters and the like. Or as charcoal used to cook or make steel.
The Irish have a good future income if they look after these peat beds, instead of permanently draining them and turning them into fields.
